Dukan Omelette Pizza

So here is the recipe (and a photo) of the delicious dish I made yesterday on the first day of my 'Cruise Phase'.


Ingredients:
- ½ red pepper, chopped
- 1/4 red onion, chopped
- 15 rocket leaves
- ½ dl roast chicken (or turkey) *
- 4 eggs
- 1tbsp. of low-fat herb cream cheese **
- tiny dash of extra virgin olive oil
- salt, pepper, paprika and provence herbs for seasoning

Cooking:
1) Chop the red pepper, the red onion and the chicken into tiny cubes.
2) Take about 10-15 rocket leaves and wash them gently.
3) Pour a little bit of oil into the cooking pan and use a kitchen towel to spread it (and to drain the excess away).
4) Wait until the pan is hot and add the onions, peppers and finally the chicken to fry. Be careful with the heat though - when you're using hardly any oil and the temperature is too hot, the veggies will burn.
5) Break the eggs into a bowl and whisk them. Add the spices into the mix.
6) Spread the veggies and the chicken evenly on the pan. Pour the egg mix on top of them evenly.
7) Add the rocket leaves on the omelette.
8) Take little cubes of the cream cheese and add little bits evenly around the pan.
9) Cook in medium heat until the eggs are almost hard.

And voila! Dinner is served!

If you want, you can add more herbs on top and some more pepper. Also, because this version contains 4 eggs (and the recommendation of the Dukan diet is to have 2 eggs per day) you can split the "pizza" and have the other half later. Although... I found it hard to stop eating ;-)

* ½ dl equals about 1/5 of a cup, but you can add more meat if you want!

** I couldn't find cream cheese with a lower fat percentage than 9% (the Dukan diet recommends fat content of 0-5%) so you can replace this with any other cheese that is lower in fat and add a little bit more. I suppose adding the cheese was a bit of a cheat, but as you can see, I didn't add a lot... And it didn't hinder my weight loss process!
