Spinach Quiche

Below is a recipe for the omelette-based Spinach Quiche I made today. It is based on this recipe.

Ingredients (serves 2 as a side):
- a bag of spinach leaves
- 1/4 chopped yellow pepper
- 25g chopped leek
- 2 eggs
- 4 egg whites
- 1dl fat-free milk
- 40g parmesan cheese
- a dash of oil

Spice and seasoning: salt, mixed pepper, herbs of Provence, garlic, paprika

1. Pre-heat the oven to 200C.
2. Mix the eggs and the egg whites in a bowl and add the milk to the mixture.
3. Season the mixture.
4. Pour some oil into an oven pan, spread it around and wipe off the excess oil with kitchen towel.
5. Place the spinach leaves, leek and pepper in the pan.
6. Pour the egg mixture on top of the veggies.
7. Grate or chop some parmesan on top of the dish.
8. Bake for about 30 minutes.
Straight from the oven...
May not look like much but it was good with a chicken breast :-)
